Pork Loin with Vegetables Pressure Cooker Recipe

Ingredients:

  • 900 g boneless pork loin, top roast
  • 250 ml water
  • 3 carrots, sliced
  • 3 potatoes, quartered
  • 1 onion, quartered
  • 2 celery stalks, sliced
  • 6 garlic cloves
  • 1 bay leaf
  • 2 tbsps vegetable oil
  • salt and pepper

Instructions:

  1. Slit the top of the pork loin using a paring knife, about 2-3 cm deep.
  2. In between slits, cut a hole into the meat, where you will insert a clove of garlic. Push the cloves into the meat entirely.
  3. Season the pork with salt and pepper, to taste.
  4. Cook the pork with vegetable oil in the pressure cooker over medium high heat, until all sides are browned well.
  5. After cooking, drain any excess oils.
  6. Then, add the water in the cooker (only do this once the cooker has already cooled down).
  7. Add bay leaf.
  8. Place the pork on cooking rack or trivet.
  9. Close the lid securely with the pressure regulator on the vent pipe.
  10. Cook for 30 minutes at 15 PSI.
  11. After cook time, immediately cool the pressure cooker and remove the meat.
  12. Place the vegetables on the rack or trivet.
  13. Return the meat on top of the vegetables (on the rack).
  14. Close the lid securely with the pressure regulator on the vent pipe.
  15. Cook for 5 more minutes at 15 PSI.
  16. After cook time, immediately cool the cooker and remove the meat and vegetables.
  17. Let the meat rest for 5 minutes before carving and serving.
